Best Agave Spirit of 2022

Barrel aging isn’t a common practice among modern mezcal producers. But the latest limited release from Ilegal might persuade more of them to consider the cask. To make it, the palenque (distillery) in Tlacolula took its herbal-forward agave spirit and matured it for seven years in French oak—35 barrels’ worth of liquid in total. It’s woven with threads of roasted pineapple and chocolate-covered fig, and maintains a vegetal, eucalyptus-like undertone at its core.

Hot Cider

1.5 cups Ilegal Reposado

1 gal apple cider

1 large orange, cut into 0.25″ slices

3 cinnamon sticks

4 star anise

1 tbsp whole cloves

1 tbsp whole allspice

1 in ginger root, sliced

/ Add all the ingredients (except mezcal) to a pot. Turn heat on low until warmed through, about 30 minutes. Add Ilegal Mezcal and serve. Makes 12.

1.25 cups orange juice

1 packet unflavored gelatin

0.75 cups Ilegal Joven

1 sprinkle Tajín

– Add orange juice to a pot and bring to boil
– Add packet of unflavored gelatin and stir until dissolved
– Add Ilegal Mezcal Joven
– Let cool
– Pour into shot glasses and add tajín
– Refrigerate
